PHILOSOPHY
Most of Chandon’s sparkling wines are blended, non-vintage wines,
designed to reflect a consistent style year to year. With this
Vintage Appellation Series, we choose to create distinctive wines
to showcase the unique qualities of a particular growing season
from each of our vineyard appellations: Yountville, Mt. Veeder and
Carneros. With this release of 2007 Vintage Brut we showcase the
fruit grown here in Yountville, the location of Domaine Chandon
Winery.
VINTAGE NOTES
A relatively cold winter with several deep frosts combined with
lower than normal rainfall contributed to a light crop in 2007.
Grape clusters weighed less than average and had uneven berry
sizing. The summer and fall temperatures were moderately cool until
a heat spike in late August and early September caused the smaller
clusters of grapes to ripen quickly to the point of maturity for
both Pinot Noir and Chardonnay. Lower crop yields and smaller
berries have resulted in finished wines that have excellent
structure, intensity and concentration of flavors.
TASTING NOTES
Complex aromas are again layered in this vintage with warm notes of
baking spice, cola and salted caramel greeting the nose. A
distinctively rich and creamy mouthfeel combine with good acidity
and leads to a lingering finish that reveals apple and pear flavors
and hints of yeast on the palate.
FOOD & WINE PAIRING
The full-bodied structure and elegant balance in the wine make it a
versatile option for a variety of foods. Classic dishes from Caesar
salad, grilled chicken and sweet or savory tarts to the unique
flavors in lamb tartare and grilled tempura would showcase the
excellent range and complexity of this wine.
