ACCOLADES
90 Points, Wine Spectator, October 7, 2009
"Rich and a hint mature, yet still fresh and lively, showing yeasty
apple and lemon aromas, with layered pear tart and crisp mineral
flavors that linger on the spicy, creamy finish."
PHILOSOPHY
Our Reserve Varietal wines introduce a new way to present
traditional sparkling wines. Pinot Noir and Chardonnay are the two
main varietals that comprise Champagne method sparkling wines.
Creating a sparkling wine with a focus on one of the core varietals
results in a distinct style that expresses the unique qualities of
Chardonnay – subtle and creamy, with a crisp delicacy. Sometimes
called Blanc de Blancs, this sparkling is an ideal pairing for
food.
Chandon Reserve Chardonnay Brut is created using fruit from our Mt.
Veeder estate, specifically selected for the robust Reserve style.
It is aged for a minimum of three years on the lees (yeast) which
lends complexity and a rich, creamy texture.
TASTING NOTES
Chandon Reserve Chardonnay Brut offers a combination of intriguing
aromas; honey, fuji apple, poached pear, malt, toasted hazelnuts
and dried flowers. Similar flavors of honey, pear, custard and
lemon tart persist over the creamy, rich palate.
FOOD AND WINE PAIRING
This wine's subtle and creamy qualities make it an excellent food
wine, particularly well suited for seafood dishes like lobster or a
decadent cheese plate. The crisp acidity provides a satisfying
contrast to tempura and fried calamari.
